Scrumptious Coconut Rice Porridge

About the Recipe

This is a perfect replacement for oat porridge which can be too drying for Vata and Pitta

Ingredients

  • ½ cup of white basmati rice

  • ½ cup of coconut milk

  • 1 tsp of cinnamon

  • 1 tsp of jaggery (raw cane sugar) (optional)

  • Raw honey to taste

  • Raisins, almonds, apricots (to taste)

Preparation

  • Cook the rice with the cinnamon and water until it well cooked and very soft.

  • Add the coconut milk and stir on low heat continuously until the milk boils. 

  • As per your taste you can add a jaggery (or raw cane sugar), dried fruits and flaked nuts to make this a well rounded nutritious breakfast that will help to pacify vata/pitta imbalances.
