Hearty Chicken Soup

About the Recipe

Perfect dish if you are feeling unwell with a cold or flu or digestion is weak. as it is easy to digest, nutritious and energising

Ingredients

  • 1 small organic free range fillet chicken

  • Finely chopped courgette, carrot, celery, peppers

  • Small red onion, spring onion

  • Thyme, sage, tarragon

  • 1 organic chicken or vegetable stock cube

  • Soya sauce few drops.

  • Chopped inch of ginger

  • Lime juice

  • 250 ml water (and 250ml coconut milk) or just water if prefer lighter

  • Rock salt and black pepper ½ – 1 tsp each

  • A small handful of pearl barley, orzo or noodles

  • Few sprigs fresh coriander

Preparation

  • Heat some ghee in a frying pan and then add onions and garlic and sauté / gently fry for a few minutes until starting to brown.

  • Add finely chopped vegetables and increase heat whilst adding seasoning and if you like a few drops of soy sauce

  • Sauté for approximately 5 minutes

  • In a large saucepan boil the water and dissolve e stock cube

  • Shred chicken into small pieces and add once the water is boiling.

  • Add in sautéed veg and stir, add in the Orzo/noodles and keep stirring

  • The chicken will cook quickly in the broth, taste and add seasoning as required

  • Reduce heat and simmer until all vegetables cooked according to your liking.

  • If using coconut milk add towards the end and ensure all cooked through

  • Add a squeeze of lime and some chopped coriander when serving
