About the Recipe
Perfect dish if you are feeling unwell with a cold or flu or digestion is weak. as it is easy to digest, nutritious and energising

Ingredients
1 small organic free range fillet chicken
Finely chopped courgette, carrot, celery, peppers
Small red onion, spring onion
Thyme, sage, tarragon
1 organic chicken or vegetable stock cube
Soya sauce few drops.
Chopped inch of ginger
Lime juice
250 ml water (and 250ml coconut milk) or just water if prefer lighter
Rock salt and black pepper ½ – 1 tsp each
A small handful of pearl barley, orzo or noodles
Few sprigs fresh coriander
Preparation
Heat some ghee in a frying pan and then add onions and garlic and sauté / gently fry for a few minutes until starting to brown.
Add finely chopped vegetables and increase heat whilst adding seasoning and if you like a few drops of soy sauce
Sauté for approximately 5 minutes
In a large saucepan boil the water and dissolve e stock cube
Shred chicken into small pieces and add once the water is boiling.
Add in sautéed veg and stir, add in the Orzo/noodles and keep stirring
The chicken will cook quickly in the broth, taste and add seasoning as required
Reduce heat and simmer until all vegetables cooked according to your liking.
If using coconut milk add towards the end and ensure all cooked through
Add a squeeze of lime and some chopped coriander when serving
